Dalton Edwards was a beloved son, brother, cousin, and friend. Born and raised in Austin, Texas, he was a graduate of Westlake High School and The Culinary Institute of America in Hyde Park, New York.

After graduating with his degree in culinary arts, the rogue Southern gentleman made his mark on upstate New York, a different kind of "country", opening his own gourmet food truck restaurant, The Beacon Bite, which became a lively fixture of his adopted small town New York community.

Dalton was larger than life and he will be remembered in particular for his oversized heart. His kindness and generosity reached the fabled height of Texas tall tales. You could usually hear the roar of his muscle car or motorcycle before seeing him saunter up in his wide-as-a-street, outlaw's stride, but he could pay for a group's dinner bill as quickly and quietly as a cat burglar.

He was loved just as much for his slapstick jokes and zany mishaps, as he was for his stoic seriousness when it came to his passions and his love of family. He would perform backbending feats of strength to cook and host beautiful dinners for his favorite people, creating unforgettable memories that will keep feeding us for years to come. And it would be criminal not to mention his finely honed brand of chivalry and all of the ladies that loved him along the way. He was the first one on the dancefloor and the last one to ever leave a girl hanging.

He lived for times spent with Burke, his father, role model, and lifelong best friend, and he treated every woman he loved like a queen, especially his adoring mother Tracy and sister Hayden, who will always remember him as a prince.

Dalton resided in San Marcos, TX and is survived by his mother, Tracy Edwards, his father Burke Edwards (and his wife Tricia), his sister Hayden Dillow (and her husband Patrick), his nephews Jackson and Samuel Dillow, and many aunts, uncles, and cousins.

In memory of Dalton, efforts to preserve and protect the San Marcos River, which he held so dear to his heart, can be supported via donations to The San Marcos River Foundation.

A Memorial Service will be held at 11:00 AM on Saturday, June 8, 2024
