Obituary

Esther Collins Bishop went to the arms of her Savior 7 October 2026. She was born in 1936 in Livingston, TX to Elbert and Tunnie Collins. While attending high school in Beaumont, she met the love of her life and future husband, Don, and they were married for 68 years until his death. After her children were older, Esther earned an associate degree from Kilgore College and became an office assistant in the savings and loan industry. She later moved with Don to Killeen, TX as he started his Edward Jones career. There, she took on the role of his business office manager until her retirement.

Upon Don’s retirement, they moved to New Braunfels. Esther loved spending time with family and having a kitchen full of cooks to make wonderful meals. She passed on her ability to create the best tasting pot of pintos and a fully Southern meal, complete with fried okra and peas. She enjoyed travelling to Greece, Italy, and other places around the world with Don. She had an eye for beauty and detail and used it to create warm and inviting living spaces in her various homes throughout the years. Friends and family will remember her ability to laugh easily and brighten any gathering. She was committed to maintaining her connections with those she loved, including dear friends from elementary school. After Don’s passing, she bravely moved out of her beloved state of Texas to Fargo, ND to be near her son and daughter-in-law.

Esther is preceded in death by her parents, a brother and sister, her husband, and daughter. She is survived by three siblings, her son and daughter-in-law, son-in-law, four grandchildren and two great-grandchildren.

The family will receive friends on Friday, October 23, 2026 from 11:00 AM – 12:00 PM at Doeppenschmidt Funeral Home in New Braunfels. A graveside service will be held at 1:00 PM at Guadalupe Valley Memorial Park in New Braunfels.
